Even vegans can’t stomach vegan cheese

I’m one of those gobby vegans who will happily tell anyone why they should stop consuming animal products. But I can still admit what’s obviously true: most vegan cheese isn’t particularly good. I was once ardently devoted to cheese. In my vegetarian years, paneer, mozzarella and halloumi were less foods than companions. I loved how paneer would soak up the spice of a curry like a sponge. Mozzarella was like a spectacle of tensile, elastic theatre and halloumi provided evocative, salty squeaks. I also took delight in the standard toasted cheddar sandwich. Yes, I did get quite fat. But when I learned about what goes on at dairy farms, everything changed.

The possibilities of gluten and dairy-free cooking

My sister recently gave up gluten and dairy on doctor’s orders. In a show of support, my whole family has been exploring ways to make shared meals more tolerable for the poor woman, suddenly deprived of the two best food groups. We’re revisiting family recipes for breakfasts, sides and desserts: my grandmother’s strata, with its layers of cheese-soaked bread, is out altogether, while mashed potatoes go without butter and pie goes without crust. It’s easy to make your first GF/DF meal. The first time my sister came over for dinner after starting her new lifestyle, we smoked a pork shoulder and ate it with mayo-based coleslaw and baked beans: a classic BBQ! Meat and potatoes are GF/DF, as are stir-fried veggies and rice, and bacon and eggs.

Lawmakers debate milk in school lunches

The stakes were high this week as Congress’s dairy big cow-culation to allow whole milk back in cafeterias loomed. When push came to shove, Republicans and Democrats set aside their beef to allow kids the freedom to drink as they please. The broadly bipartisan bill, the Whole Milk for Healthy Kids Act, passed the House by a 330-99 vote — reversing Michelle Obama’s crazy push to ban whole milk from school lunches. “I am udderly in favor of whole milk,” Nebraska congressman Don Bacon told me, milking this vote for all it’s worth.
